Most sushi classes for visitors happen in a gleaming demo kitchen with brand-new tools, and end with eight pieces that look identical to everyone else's. Here you stand BEHIND a working sushi counter — the same board, the same knife, the same warmed rice tub the chef uses to serve the lunch crowd.
Two hours, three clear parts. The first half hour is only about RICE: press a little too hard and the grains break and the piece becomes a lump of paste; press too gently and it falls apart between the chopsticks. Nobody learns that pressure from a lecture — you have to ruin a few. The next half hour is the knife: four kinds of fish, four different angles, and why cutting salmon the way you cut tuna tears every slice. In the last half hour you shape your own eight while the chef corrects each one.
Then you sit down and eat exactly those eight, with miso soup and tea. Eating the piece you got wrong teaches more than any explanation. An English interpreter is there throughout; apron and photos taken for you are already in the price — you're not holding a phone with rice on your hands.
