About this experience

Two peaks of Japanese dining in one night: a counter omakase course, then A5 wagyu grilled to melt. Your guide handles seats, ordering and the story behind every piece.

Omakase literally means "I leave it to you": you don't order, the chef decides what you eat based on what was at the market that morning. It's the hardest Japanese meal for a visitor to book alone — many counters don't take online reservations, have no English menu, and some accept only guests introduced by a regular.

These three hours are a high-end dinner with someone alongside you handling the hard part. The first half is at the sushi counter: pieces set down in front of you in an order the chef has already planned — light white fish first, fatty and cured cuts later, the rice a touch warmer than the fish. The second half is A5 wagyu, thin slices grilled in front of you and served with salt and fresh wasabi instead of sauce, because beef at this grade doesn't need hiding.

Your guide translates what the chef says, shows you the order to eat in and how to dip properly, and above all handles the reservation you almost certainly couldn't make alone. This is the most expensive tour on the list, and it doesn't pretend otherwise.
