About this experience

Clear shoyu, rich tonkotsu, deep miso — a tasting-size bowl at each shop covers three broth schools in one evening, with the stories behind Tokyo's 40-minute ramen queues.

Tokyo has more than four thousand ramen shops, which is exactly the problem: internet rankings send you to three forty-minute queues and you still can't explain why one bowl differs from the next. Ramen isn't one dish — it's three broth schools that have been arguing for sixty years.

Tonight covers all three. Shoyu — clear, soy-based, the oldest Tokyo style, so restrained that first-timers often mistake it for plain. Tonkotsu — pork bone boiled until the broth turns milky, fat clinging to your lips, a Kyushu import. And miso — thick, salty, warming, born in cold Hokkaido. Each shop serves a tasting-size bowl rather than a full one, so the third is still a pleasure. Between them comes the part you can't teach yourself: reading the ticket machine at the door, choosing noodle firmness, and why slurping is good manners here.
